
i made a very large pot of kare kare tonight! yummy. we were so hungry the vegetables werent fully cooked yet haha! good for left overs. ahh. no cooking tomorrow whew!

i thought id write up the procedure:
veggie kare kare (traditional peanut oxtail stew)
*mama sitas kare kare mix
1 bottle bagoong (shrimp fry paste)
onion chopped
garlic chopped
broth
3/4 c peanut butter mixed with 2 tablespoons rice flour and 1 cup water
bok choy 4 bundles separated
long beans half a bundle cut into 2 inch pieces
eggplant cut in 4 lengthwise long pieces around 4 inches long
tofu (this is the oxtail!)
*rice flour
*achuete (those triangle red seeds for coloring)
fry onions garlic, fry eggplant till sealed, add long beans, add water/broth cook for a bit. (add tofu whenever)
add peanut butter rice flour mix, mix. add broth if too thick?if too thin add rice flour mix with water and peanut butter.
add achuete oil (or if using mix/power follow directions) slowly till color reaches yummy !
cook while adjusting peanut butter or achuete or salt pepper... we added braggs? add bokchoy...
when bokchoy is cooked remove from heat or turn very low.
serve with rice and bagoong! delish.
